Baking a fresh batch of brownies is one of my favorite things to do in my kitchen. However, baking brownies the right way is an important skill for any baker to learn. From my years of baking experience, I’ve learned that things don’t always go according to plan in the kitchen.
There was one instance where I realized I didn’t have enough time to finish baking my brownies while in the middle of creating the brownie batter. This brought up a few questions that I had to know the answers to. Can I freeze brownie batter? How do I freeze my unbaked brownie mix the right way?
Brownie batter can be frozen without sacrificing its integrity. Put the unbaked brownie mix into a freezer bag and onto a flat sheet pan. This will allow the batter to freeze flat and be well distributed. Alternatively, put the batter in a disposable pan and wrap it in foil to prevent freezer burn.
Throughout my baking journey, I’ve baked hundreds of brownies for all types of occasions. Learning how to preserve the integrity of my unbaked brownie mix saved me a lot of time over the years. This is why I have a few more tips to provide in order for you to freeze your brownie batter the right way.
How to Freeze Brownie Batter
If you want to freeze your brownie batter short term, you should use the freezer bag option. Put your ready brownie batter into a freezer bag and spread it along the entire length of the bag. This will help the batter remain nice and flat throughout the freezing process.
Once done, make sure to remove any excess air out of the bag and seal it shut! Fully removing the air out of the freezer bag can help prevent the oxidation of the brownie batter. Oxidation can spoil any food faster even if frozen.

Place the freezer bag full of brownie batter into a flat sheet pan/cookie sheet in order to keep the shape of the batter flat. I also like to place a paper towel in between the sheet pan and the freezer paper in order to help absorb any excess moisture that could accumulate.
While it’s less optimal, another way to freeze your brownie batter short term is to place the batter into a disposable pan and cover it with either Aluminum foil or freezer paper. This, again, will prevent the batter from getting a freezer burn.

How long can you freeze brownie batter?
On average, brownie batter can be frozen for 12 to 18 months without sacrificing its freshness. Put the unbaked brownie mix into a freezer bag and remove any excess air out of the bag. This will help prevent oxidation of the brownie batter long-term and keep it safe to eat.
As you may already know, air is the enemy of all food. Air oxidizes enzymes in food which results in the spoilage of the food. Keeping your batter-filled freezer bag airtight is the most important step to keeping it fresher for longer.
Does freezing ruin brownies?
As a general rule, brownie batter can be frozen in the freezer without sacrificing its freshness. Put the unbaked brownie mix into a freezer bag and remove any excess air out of the bag. Place the freezer bag onto a flat sheet pan. This will allow the batter to freeze flat and be well distributed.
Regular brownie batter is made up of several essential ingredients:
- Cocoa Powder
- Oil or butter
These essential ingredients have a tendency of freezing well and keeping their freshness over time while being frozen.
How do you thaw frozen brownie batter?
Remove the frozen brownie batter from the freezer and put it in the refrigerator. Let it thaw for several hours or overnight. Place the batter on the countertop for 20 minutes or until room temperature while preheating the oven. This gradual increase in temperature keeps the batter fresh for baking.
Once you place the freezer bag full of frozen brownie batter into the fridge, I would suggest surrounding the batter with more paper towels. Since the frozen batter will be thawing in the fridge for several hours, the paper towels will help absorb any excess water that will melt over time.
This will keep your brownie batter fresh while keeping your refrigerator nice and clean.
How long can brownie batter be refrigerated?
As a general rule, homemade brownie batter should last for 7 days inside the refrigerator without sacrificing its freshness. Put the unbaked brownie mix into a freezer bag and remove any excess air out of the bag. This will help prevent oxidation of the batter long-term and keep it safe to eat.
If you are ready to bake your batter on the following day, refrigerating the batter is the best option for you. It will bring out the cocoa flavor of your brownie batter much better than if you were to leave the batter in your pantry.

While refrigerating your brownie batter for more than a few days can help preserve its freshness, I would suggest freezing your batter instead! Freezing the batter for more than a few days can help the batter retain its freshness for longer.

Knowing that freezing unbaked brownie mix doesn’t take away from the freshness of the brownies, allowed me to take advantage of freezing large amounts of brownie batter a few days before I needed to bake them. Having frozen brownie batter ready for me to bake, gave me the confidence that I needed in order to make the brownies on time during an event!
